Old Ale Update

old-aleI brewed an Old Ale last November, my first funky beer, and for a long time it sat in secondary doing nothing. About a month ago, it started to look like there was some activity on the rise, and now it’s starting to look like I expected. My plan is to let it age a year, so we have a few more months ahead, but the visual and aroma are very promising.

UK Pale Ale Malt 15lb 0oz (76.9 %) In Mash/Steeped
German Munich Malt 2lb 3oz (11.3 %) In Mash/Steeped
German Wheat Malt 1lb 8oz (7.7 %) In Mash/Steeped
US Victory Malt 12.00 oz (3.8 %) In Mash/Steeped
UK Chocolate Malt 1.00 oz (0.3 %) In Mash/Steeped

US Magnum (9.1 % alpha) 2.40 oz Loose Pellet Hops used 60 Min From End

Yeast: Wyeast Old Ale Blend 9097

Mash Schedule
Mash Type: Full Mash
Step: Rest at 158 degF for 60 mins
